Instructions
- Combine Wet Ingredients: In a large mixing bowl, combine the pumpkin purée, melted butter, vanilla extract, pumpkin pie spice, and salt. Stir the mixture well until it becomes smooth and homogenous.
- Add Powdered Sugar: Gradually add powdered sugar to the wet mixture, one cup at a time, mixing thoroughly after each addition. Continue until a stiff dough forms that can be shaped by hand without sticking. Adjust the amount based on the moisture in your pumpkin.
- Add Color (Optional): If desired, add a drop of orange food coloring to the dough to enhance the pumpkin color. Mix until the color is evenly distributed throughout the dough.
- Shape Patties: Scoop out small portions of the dough and roll each into approximately 1-inch balls. Flatten them slightly and use a toothpick to make vertical lines around the sides to resemble pumpkin ridges.
- Add Stems: Press a mini chocolate chip or a whole clove into the top center of each patty to simulate a pumpkin stem.
- Chill: Place the shaped patties on a parchment-lined tray and chill them in the refrigerator for 1 hour to firm up before serving.
