- 3 cups crispy rice cereal
- 1 cup vanilla protein powder
- 1/2 cup peanut butter (or almond butter)
- 1/2 cup honey or maple syrup
- 1/4 cup coconut oil
- 1 tsp vanilla extract
- 1/4 tsp salt
Instructions
- Line an 8×8-inch pan with parchment paper and set aside.
- In a large bowl, mix the crispy rice cereal and protein powder together.
- In a small saucepan over low heat, melt the peanut butter, honey, and coconut oil until smooth. Stir in vanilla extract and salt.
- Pour the melted mixture over the cereal mixture and stir until fully combined.
- Transfer the mixture to the prepared pan and press it down evenly using a spatula or your hands.
- Refrigerate for at least 1 hour, or until set.
- Cut into squares and enjoy. Store in the fridge for up to a week.
Notes
- You can use any flavor of protein powder you like.
- Add mini chocolate chips or dried fruit for variety.
- Make it vegan by using maple syrup and a plant-based protein powder.
