Description

These easy pickled red onions are quick to prepare and add a zesty, tangy crunch to tacos, burgers, salads, and more. Perfect for meal prep and storing in the fridge.


Ingredients

  • 1 large red onion, thinly sliced
  • 1 cup white vinegar
  • 1/2 cup water
  • 1 tablespoon sugar
  • 1 1/2 teaspoons salt
  • 1/2 teaspoon black peppercorns (optional)
  • 1 garlic clove, smashed (optional)
  • 1/4 teaspoon red pepper flakes (optional)

Instructions

  1. Thinly slice the red onion and place it in a clean jar.
  2. In a small saucepan, combine vinegar, water, sugar, and salt. Add peppercorns, garlic, and red pepper flakes if using.
  3. Bring the mixture to a simmer over medium heat, stirring until the sugar and salt dissolve.
  4. Remove from heat and pour the hot brine over the onions in the jar, making sure they are fully submerged.
  5. Let the mixture cool to room temperature, then seal the jar and refrigerate.
  6. Allow the onions to pickle for at least 1 hour before using. For best flavor, refrigerate overnight.

Notes

  • Pickled onions can be stored in the fridge for up to 2 weeks.
  • For a slightly sweeter version, increase the sugar to 2 tablespoons.
  • Try using apple cider vinegar for a different flavor twist.
