Description

Light, fluffy, and bursting with citrus flavor, these Easy Lemon Lime Soda Cupcakes are made using lemon-lime soda for a moist texture and a refreshing twist.


Ingredients

  • 1 box white cake mix
  • 1 cup lemon-lime soda (like Sprite or 7UP)
  • 1/3 cup vegetable oil
  • 3 large eggs
  • 1 tsp lemon zest
  • 1 tsp lime zest
  • 1 cup unsalted butter (softened)
  • 34 cups powdered sugar
  • 2 tbsp lemon juice
  • 2 tbsp lime juice
  • 1 tsp vanilla extract
  • Pinch of salt

Instructions

  1. Preheat oven to 350°F (175°C) and line a cupcake pan with cupcake liners.
  2. In a large mixing bowl, combine white cake mix, lemon-lime soda, vegetable oil, eggs, lemon zest, and lime zest. Mix until smooth.
  3. Divide the batter evenly among the cupcake liners, filling each about 2/3 full.
  4. Bake for 18–20 minutes, or until a toothpick inserted into the center comes out clean. Allow to cool completely.
  5. To make the frosting, beat softened butter until creamy. Gradually add powdered sugar, lemon juice, lime juice, vanilla extract, and a pinch of salt. Beat until fluffy.
  6. Pipe or spread the frosting onto the cooled cupcakes.
  7. Garnish with additional lemon or lime zest if desired.
