Description

Easy Lemon Bars are a classic dessert featuring a buttery shortbread crust topped with a tangy and sweet lemon filling. Perfect for any occasion, they are simple to make and always a crowd-pleaser.


Ingredients

  • 1 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 2 cups all-purpose flour
  • 1/4 tsp salt
  • 1 1/2 cups granulated sugar
  • 1/4 cup all-purpose flour
  • 4 large eggs
  • 2/3 cup fresh lemon juice (about 3-4 lemons)
  • Powdered sugar, for dusting

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×13-inch baking dish or line with parchment paper.
  2. In a medium bowl, mix softened butter, 1/2 cup sugar, 2 cups flour, and salt until a crumbly dough forms.
  3. Press the dough evenly into the bottom of the prepared baking dish to form the crust.
  4. Bake crust for 18-20 minutes or until lightly golden. Remove from oven and set aside.
  5. In another bowl, whisk together 1 1/2 cups sugar and 1/4 cup flour. Add eggs and lemon juice and mix until fully combined.
  6. Pour the lemon mixture over the warm crust.
  7. Bake for an additional 20-25 minutes, or until the filling is set and lightly golden on top.
  8. Allow to cool completely. Dust with powdered sugar before cutting into squares or bars.

Notes

  • Use freshly squeezed lemon juice for the best flavor.
  • Lemon bars can be stored in the refrigerator for up to 4 days.
  • For a firmer crust, chill the dough for 10 minutes before baking.
