- 2 1/2 cups all-purpose flour
- 1 teaspoon salt
- 1 cup unsalted butter, chilled and diced
- 6–8 tablespoons ice water
- 6 cups thinly sliced, peeled apples (about 6 medium apples)
- 3/4 cup granulated sugar
- 1/4 cup brown sugar
- 2 tablespoons all-purpose flour
- 1 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1 tablespoon lemon juice
- 1 tablespoon butter, diced
- 1 egg, beaten (for egg wash)
Instructions
- In a large bowl, mix flour and salt. Cut in butter until mixture resembles coarse crumbs. Stir in ice water, a tablespoon at a time, until dough forms a ball. Divide dough in half, shape into disks, wrap in plastic, and refrigerate for at least 1 hour.
- Preheat oven to 425°F (220°C).
- In a large bowl, toss sliced apples with granulated sugar, brown sugar, flour, cinnamon, nutmeg, and lemon juice until well coated.
- Roll out one dough disk on a lightly floured surface to fit a 9-inch pie plate. Transfer dough to pie plate and trim edges.
- Fill crust with apple mixture and dot with diced butter.
- Roll out second dough disk and place over filling. Seal and crimp edges. Cut small slits in the top to vent.
- Brush top crust with beaten egg for a golden finish.
- Bake in preheated oven for 45-50 minutes, or until crust is golden brown and filling is bubbly. Cover edges with foil if they brown too quickly.
- Cool on a wire rack before serving.
Notes
- Use a mix of sweet and tart apples for the best flavor.
- Chill the dough well to ensure a flaky crust.
- You can sprinkle a little coarse sugar on top for extra sparkle.
