Ingredients

  • 2 1/2 cups all-purpose flour
  • 1 teaspoon salt
  • 1 cup unsalted butter, chilled and diced
  • 68 tablespoons ice water
  • 6 cups thinly sliced, peeled apples (about 6 medium apples)
  • 3/4 cup granulated sugar
  • 1/4 cup brown sugar
  • 2 tablespoons all-purpose flour
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1 tablespoon lemon juice
  • 1 tablespoon butter, diced
  • 1 egg, beaten (for egg wash)

Instructions

  1. In a large bowl, mix flour and salt. Cut in butter until mixture resembles coarse crumbs. Stir in ice water, a tablespoon at a time, until dough forms a ball. Divide dough in half, shape into disks, wrap in plastic, and refrigerate for at least 1 hour.
  2. Preheat oven to 425°F (220°C).
  3. In a large bowl, toss sliced apples with granulated sugar, brown sugar, flour, cinnamon, nutmeg, and lemon juice until well coated.
  4. Roll out one dough disk on a lightly floured surface to fit a 9-inch pie plate. Transfer dough to pie plate and trim edges.
  5. Fill crust with apple mixture and dot with diced butter.
  6. Roll out second dough disk and place over filling. Seal and crimp edges. Cut small slits in the top to vent.
  7. Brush top crust with beaten egg for a golden finish.
  8. Bake in preheated oven for 45-50 minutes, or until crust is golden brown and filling is bubbly. Cover edges with foil if they brown too quickly.
  9. Cool on a wire rack before serving.
