Description
These easy ground beef enchiladas are a simple and satisfying Mexican-inspired dinner, made with seasoned beef, cheese, and enchilada sauce wrapped in soft tortillas.

- 1 lb ground beef
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 packet taco seasoning
- 1/4 cup water
- 8 flour tortillas (6-inch)
- 2 cups shredded cheddar or Mexican cheese blend
- 1 can (10 oz) red enchilada sauce
- 1 tablespoon olive oil (optional)
- Fresh cilantro for garnish (optional)
Instructions
- Preheat oven to 375°F (190°C).
- In a large skillet over medium heat, cook ground beef until browned. Drain excess fat if needed.
- Add diced onion and garlic to the skillet and cook for 2–3 minutes until softened.
- Stir in taco seasoning and water. Simmer for 5 minutes until thickened.
- Warm tortillas in the microwave or on a skillet to make them pliable.
- Fill each tortilla with a few spoonfuls of the beef mixture and a sprinkle of cheese. Roll up and place seam-side down in a greased 9×13 inch baking dish.
- Pour enchilada sauce evenly over the rolled tortillas and top with remaining cheese.
- Bake for 20–25 minutes, or until cheese is melted and bubbly.
- Garnish with fresh cilantro if desired and serve hot.
Notes
- You can use corn tortillas if preferred, but soften them first to prevent cracking.
- Add black beans or corn to the beef mixture for added texture and flavor.
- Top with sour cream, avocado, or salsa for extra flavor.
