Description

These easy ground beef enchiladas are a simple and satisfying Mexican-inspired dinner, made with seasoned beef, cheese, and enchilada sauce wrapped in soft tortillas.


Ingredients

  • 1 lb ground beef
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 packet taco seasoning
  • 1/4 cup water
  • 8 flour tortillas (6-inch)
  • 2 cups shredded cheddar or Mexican cheese blend
  • 1 can (10 oz) red enchilada sauce
  • 1 tablespoon olive oil (optional)
  • Fresh cilantro for garnish (optional)

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a large skillet over medium heat, cook ground beef until browned. Drain excess fat if needed.
  3. Add diced onion and garlic to the skillet and cook for 2–3 minutes until softened.
  4. Stir in taco seasoning and water. Simmer for 5 minutes until thickened.
  5. Warm tortillas in the microwave or on a skillet to make them pliable.
  6. Fill each tortilla with a few spoonfuls of the beef mixture and a sprinkle of cheese. Roll up and place seam-side down in a greased 9×13 inch baking dish.
  7. Pour enchilada sauce evenly over the rolled tortillas and top with remaining cheese.
  8. Bake for 20–25 minutes, or until cheese is melted and bubbly.
  9. Garnish with fresh cilantro if desired and serve hot.

Notes

  • You can use corn tortillas if preferred, but soften them first to prevent cracking.
  • Add black beans or corn to the beef mixture for added texture and flavor.
  • Top with sour cream, avocado, or salsa for extra flavor.
