Instructions
- Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Cream together the butter and sugar until light and fluffy.
- Beat in the egg, lemon zest, and lemon juice until combined.
- In a separate bowl, whisk together the flour, baking soda, baking powder, and salt.
- Gradually add the dry ingredients to the wet ingredients and mix until just combined.
- Scoop tablespoon-sized portions of dough onto the prepared baking sheet, spacing them 2 inches apart.
- Bake for 8-10 minutes, until the edges are set but the centers are still soft.
- Allow cookies to cool completely on a wire rack.
- To make the glaze, whisk together the powdered sugar and lemon juice until smooth.
- Drizzle or spread the glaze over the cooled cookies and let it set before serving.
