Instructions

  1. Prepare the Dates: Slice each Medjool date lengthwise, removing the pit carefully. Open the dates gently like a book without cutting all the way through to create a pocket for the filling.
  2. Fill the Dates: Spoon about 1/2 tablespoon of creamy peanut butter into each opened date, spreading it evenly inside the pocket.
  3. Add Peanuts: Press a few roasted peanuts into the peanut butter filling inside each date to add crunch and texture.
  4. Melt the Chocolate: In a microwave-safe bowl or over a double boiler, melt the dark chocolate along with the optional coconut oil until the mixture is smooth and glossy, stirring frequently to avoid burning.
  5. Coat the Dates: Using a fork or dipping tool, dip each stuffed date into the melted chocolate ensuring it’s fully coated. Place the chocolate-covered dates on a parchment-lined tray for easy cleanup.
