- Prepare the Dates: Slice each Medjool date lengthwise, removing the pit carefully. Open the dates gently like a book without cutting all the way through to create a pocket for the filling.
- Fill the Dates: Spoon about 1/2 tablespoon of creamy peanut butter into each opened date, spreading it evenly inside the pocket.
- Add Peanuts: Press a few roasted peanuts into the peanut butter filling inside each date to add crunch and texture.
- Melt the Chocolate: In a microwave-safe bowl or over a double boiler, melt the dark chocolate along with the optional coconut oil until the mixture is smooth and glossy, stirring frequently to avoid burning.
- Coat the Dates: Using a fork or dipping tool, dip each stuffed date into the melted chocolate ensuring it’s fully coated. Place the chocolate-covered dates on a parchment-lined tray for easy cleanup.
- Sprinkle Sea Salt: While the chocolate is still wet, sprinkle a pinch of sea salt over each date to enhance the flavor and contrast the sweetness.
- Set the Chocolate: Refrigerate the tray of chocolate-covered dates for about 10 minutes or until the chocolate is firm and set. Once ready, serve immediately or store in an airtight container in the refrigerator.
