These Easy Ground Beef Enchiladas are a quick and flavorful weeknight dinner made with seasoned ground beef, cheese, and enchilada sauce wrapped in soft tortillas and baked to perfection.

- 1 lb ground beef
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 (1 oz) packet taco seasoning
- 1/2 cup water
- 8 flour tortillas (8-inch)
- 2 cups shredded cheddar cheese
- 1 (10 oz) can red enchilada sauce
- 1/2 cup chopped fresh cilantro (optional)
- 1/4 cup sour cream (optional, for serving)
Instructions
- Preheat oven to 375°F (190°C).
- In a large skillet over medium heat, cook ground beef and diced onion until beef is browned and onion is softened, about 5-7 minutes.
- Add minced garlic and cook for another 1 minute.
- Stir in taco seasoning and water. Simmer for 2-3 minutes until thickened. Remove from heat.
- Spoon 2-3 tablespoons of the beef mixture into each tortilla. Sprinkle with a little cheese, then roll up and place seam-side down in a greased 9×13-inch baking dish.
- Pour enchilada sauce evenly over the rolled tortillas and sprinkle remaining cheese on top.
- Bake for 20 minutes or until cheese is melted and bubbly.
- Garnish with chopped cilantro and serve with sour cream if desired.
Notes
- Use corn tortillas for a more traditional flavor.
- Can substitute ground turkey or chicken for a leaner option.
- Make ahead and refrigerate before baking for a convenient meal.
