Description

These Easy Ground Beef Enchiladas are a quick and flavorful weeknight dinner made with seasoned ground beef, cheese, and enchilada sauce wrapped in soft tortillas and baked to perfection.


Ingredients

  • 1 lb ground beef
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 (1 oz) packet taco seasoning
  • 1/2 cup water
  • 8 flour tortillas (8-inch)
  • 2 cups shredded cheddar cheese
  • 1 (10 oz) can red enchilada sauce
  • 1/2 cup chopped fresh cilantro (optional)
  • 1/4 cup sour cream (optional, for serving)

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a large skillet over medium heat, cook ground beef and diced onion until beef is browned and onion is softened, about 5-7 minutes.
  3. Add minced garlic and cook for another 1 minute.
  4. Stir in taco seasoning and water. Simmer for 2-3 minutes until thickened. Remove from heat.
  5. Spoon 2-3 tablespoons of the beef mixture into each tortilla. Sprinkle with a little cheese, then roll up and place seam-side down in a greased 9×13-inch baking dish.
  6. Pour enchilada sauce evenly over the rolled tortillas and sprinkle remaining cheese on top.
  7. Bake for 20 minutes or until cheese is melted and bubbly.
  8. Garnish with chopped cilantro and serve with sour cream if desired.

  • Use corn tortillas for a more traditional flavor.
  • Can substitute ground turkey or chicken for a leaner option.
