Description

This Easy Chuck Roast Recipe creates a tender, flavorful roast with minimal effort, perfect for a comforting family dinner.


Ingredients

  • 34 lbs chuck roast
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried thyme
  • 1 teaspoon paprika
  • 1 cup beef broth
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 4 carrots, chopped
  • 4 potatoes, chopped

Instructions

  1. Preheat oven to 300°F (150°C).
  2. Season the chuck roast with salt, pepper, garlic powder, onion powder, thyme, and paprika.
  3. Heat olive oil in a large oven-safe pot or Dutch oven over medium-high heat.
  4. Sear the roast on all sides until browned, about 4 minutes per side.
  5. Remove roast and set aside. Add onions and garlic to the pot and cook for 2-3 minutes until fragrant.
  6. Place the roast back in the pot and pour in the beef broth.
  7. Add carrots and potatoes around the roast.
  8. Cover with lid and cook in the preheated oven for 3-4 hours, until the roast is fork-tender.
  9. Remove from oven, let rest for 10 minutes, then shred or slice and serve with vegetables and juices.

Notes

  • For extra flavor, add a splash of red wine with the broth.
  • You can add celery or mushrooms for variety.
  • Leftovers make excellent sandwiches or tacos.
