This Easy Chuck Roast Recipe creates a tender, flavorful roast with minimal effort, perfect for a comforting family dinner.

- 3–4 lbs chuck roast
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon dried thyme
- 1 teaspoon paprika
- 1 cup beef broth
- 1 onion, chopped
- 3 cloves garlic, minced
- 4 carrots, chopped
- 4 potatoes, chopped
Instructions
- Preheat oven to 300°F (150°C).
- Season the chuck roast with salt, pepper, garlic powder, onion powder, thyme, and paprika.
- Heat olive oil in a large oven-safe pot or Dutch oven over medium-high heat.
- Sear the roast on all sides until browned, about 4 minutes per side.
- Remove roast and set aside. Add onions and garlic to the pot and cook for 2-3 minutes until fragrant.
- Place the roast back in the pot and pour in the beef broth.
- Add carrots and potatoes around the roast.
- Cover with lid and cook in the preheated oven for 3-4 hours, until the roast is fork-tender.
- Remove from oven, let rest for 10 minutes, then shred or slice and serve with vegetables and juices.
Notes
- For extra flavor, add a splash of red wine with the broth.
- You can add celery or mushrooms for variety.
- Leftovers make excellent sandwiches or tacos.
