Description

These easy chocolate salted caramel tarts are a decadent dessert featuring a rich chocolate crust, gooey caramel filling, and a luscious chocolate ganache topping finished with a sprinkle of sea salt.


Ingredients

  • 1 1/2 cups crushed chocolate cookies or graham crackers
  • 6 tbsp unsalted butter, melted
  • 1 cup granulated sugar
  • 6 tbsp unsalted butter (for caramel)
  • 1/2 cup heavy cream
  • 1/2 tsp sea salt (plus extra for topping)
  • 1/2 cup heavy cream (for ganache)
  • 4 oz dark chocolate, chopped
  • 1 tsp vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C). In a bowl, mix crushed chocolate cookies with melted butter and press into mini tart pans.
  2. Bake crusts for 8-10 minutes. Let them cool completely.
  3. To make the caramel, heat sugar in a saucepan over medium heat until melted and amber-colored.
  4. Add butter and stir until melted, then carefully add heavy cream and sea salt. Cook for 1-2 minutes until smooth. Let cool slightly.
  5. Pour caramel into cooled tart crusts and refrigerate for 30 minutes until set.
  6. Heat heavy cream for ganache and pour over chopped chocolate. Let sit for 2 minutes, then stir until smooth. Add vanilla extract.
  7. Spread chocolate ganache over the caramel layer in each tart.
  8. Chill for another 30 minutes or until set. Sprinkle sea salt on top before serving.

Notes

  • You can use store-bought caramel sauce for convenience.
  • Use high-quality dark chocolate for best flavor.
  • These can be made a day ahead and stored in the fridge.
