- 3 large eggs
- 1 1/2 cups milk

- 2 tablespoons melted butter (plus more for greasing the pan)
Instructions
- In a large bowl, whisk together the flour, cocoa powder, sugar, and salt.
- In another bowl, whisk the eggs, milk, vanilla extract, and melted butter until well combined.
- Gradually pour the wet ingredients into the dry ingredients, whisking until the batter is smooth. Let it rest for 15-30 minutes.
- Heat a non-stick skillet or crepe pan over medium heat and lightly grease with butter.
- Pour about 1/4 cup of batter into the pan and swirl to coat the bottom evenly.
- Cook for 1-2 minutes until the edges begin to lift, then flip and cook for another 30 seconds to 1 minute.
- Transfer the crepe to a plate and repeat with the remaining batter.
- Serve warm with your favorite toppings such as whipped cream, fresh berries, or Nutella.

- Resting the batter helps the flour fully hydrate and results in more tender crepes.
- Use a fine mesh sieve to sift the cocoa powder and flour to avoid lumps.
