Description

  • 3 large eggs
  • 1 1/2 cups milk
  • 1 teaspoon vanilla extract
  • 2 tablespoons melted butter (plus more for greasing the pan)

Instructions

  1. In a large bowl, whisk together the flour, cocoa powder, sugar, and salt.
  2. In another bowl, whisk the eggs, milk, vanilla extract, and melted butter until well combined.
  3. Gradually pour the wet ingredients into the dry ingredients, whisking until the batter is smooth. Let it rest for 15-30 minutes.
  4. Heat a non-stick skillet or crepe pan over medium heat and lightly grease with butter.
  5. Pour about 1/4 cup of batter into the pan and swirl to coat the bottom evenly.
  6. Cook for 1-2 minutes until the edges begin to lift, then flip and cook for another 30 seconds to 1 minute.
  7. Transfer the crepe to a plate and repeat with the remaining batter.
  8. Serve warm with your favorite toppings such as whipped cream, fresh berries, or Nutella.

  • Resting the batter helps the flour fully hydrate and results in more tender crepes.
