Description

These Easy Chicken Fajitas are a quick and delicious weeknight dinner, featuring tender chicken strips, colorful bell peppers, and onions all cooked to perfection with flavorful spices.


Ingredients

  • 1 lb boneless, skinless chicken breasts, sliced into thin strips
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 medium onion, sliced
  • 2 tbsp olive oil
  • 1 tsp chili powder
  • 1 tsp ground cumin
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp paprika
  • 1/4 tsp crushed red pepper flakes (optional)
  • Salt and pepper to taste
  • 8 small flour tortillas
  • Optional toppings: sour cream, guacamole, shredded cheese, salsa, chopped cilantro, lime wedges

Instructions

  1. In a large bowl, combine chili powder, cumin, garlic powder, onion powder, paprika, red pepper flakes, salt, and pepper.
  2. Add the chicken strips to the bowl and toss to coat evenly with the spices.
  3. Heat 1 tablespoon of olive oil in a large skillet over medium-high heat.
  4. Add the chicken and cook for 5-7 minutes until cooked through and lightly browned. Remove and set aside.
  5. In the same skillet, heat the remaining tablespoon of olive oil.
  6. Add the bell peppers and onion, and sauté for 5-7 minutes until softened and slightly caramelized.
  7. Return the chicken to the skillet and stir to combine with the vegetables. Cook for another 2 minutes until everything is heated through.
  8. Warm the tortillas in a dry skillet or microwave.
  9. Serve the chicken and veggie mixture in the tortillas with desired toppings.

Notes

  • You can substitute chicken with beef or shrimp.
  • Make it spicier by adding more red pepper flakes or a dash of hot sauce.
  • Prep everything in advance to make this a super quick weeknight meal.
