- 1 lb boneless, skinless chicken breasts, sliced into thin strips
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 medium onion, sliced
- 2 tbsp olive oil
- 1 tsp chili powder
- 1 tsp ground cumin
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 1/2 tsp paprika
- 1/4 tsp crushed red pepper flakes (optional)
- Salt and pepper to taste
- 8 small flour tortillas
- Optional toppings: sour cream, guacamole, shredded cheese, salsa, chopped cilantro, lime wedges
Instructions
- In a large bowl, combine chili powder, cumin, garlic powder, onion powder, paprika, red pepper flakes, salt, and pepper.
- Add the chicken strips to the bowl and toss to coat evenly with the spices.
- Heat 1 tablespoon of olive oil in a large skillet over medium-high heat.
- Add the chicken and cook for 5-7 minutes until cooked through and lightly browned. Remove and set aside.
- In the same skillet, heat the remaining tablespoon of olive oil.
- Add the bell peppers and onion, and sauté for 5-7 minutes until softened and slightly caramelized.
- Return the chicken to the skillet and stir to combine with the vegetables. Cook for another 2 minutes until everything is heated through.
- Warm the tortillas in a dry skillet or microwave.
- Serve the chicken and veggie mixture in the tortillas with desired toppings.
Notes
- You can substitute chicken with beef or shrimp.
- Make it spicier by adding more red pepper flakes or a dash of hot sauce.
- Prep everything in advance to make this a super quick weeknight meal.
