Description

Ingredients

  • 1 cup granulated sugar
  • 6 tablespoons all-purpose flour
  • 2 (20-ounce) cans pineapple chunks, drained (reserve 1/4 cup juice)
  • 2 cups shredded sharp cheddar cheese
  • 1 1/2 cups Ritz crackers, crushed
  • 8 tablespoons (1 stick) unsalted butter, melted

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×13-inch baking dish.
  2. In a large bowl, mix the sugar and flour together.
  3. Add the drained pineapple chunks and reserved 1/4 cup pineapple juice to the sugar-flour mixture and stir to combine.
  4. Fold in the shredded cheddar cheese until well mixed.
  5. Pour the mixture into the prepared baking dish and spread evenly.
  6. In a medium bowl, combine the crushed Ritz crackers and melted butter until the crackers are well coated.
  7. Sprinkle the buttery cracker mixture evenly over the pineapple mixture.
  8. Bake in the preheated oven for 25–30 minutes, or until the top is golden brown and the casserole is bubbly.
  9. Allow to cool slightly before serving.

Notes

  • You can substitute pineapple tidbits for pineapple chunks for a slightly different texture.
