- 1 cup granulated sugar
- 6 tablespoons all-purpose flour
- 2 (20-ounce) cans pineapple chunks, drained (reserve 1/4 cup juice)
- 2 cups shredded sharp cheddar cheese
- 1 1/2 cups Ritz crackers, crushed
- 8 tablespoons (1 stick) unsalted butter, melted
Instructions
- Preheat your oven to 350°F (175°C) and grease a 9×13-inch baking dish.
- In a large bowl, mix the sugar and flour together.
- Add the drained pineapple chunks and reserved 1/4 cup pineapple juice to the sugar-flour mixture and stir to combine.
- Fold in the shredded cheddar cheese until well mixed.
- Pour the mixture into the prepared baking dish and spread evenly.
- In a medium bowl, combine the crushed Ritz crackers and melted butter until the crackers are well coated.
- Sprinkle the buttery cracker mixture evenly over the pineapple mixture.
- Bake in the preheated oven for 25–30 minutes, or until the top is golden brown and the casserole is bubbly.
- Allow to cool slightly before serving.
Notes
- You can substitute pineapple tidbits for pineapple chunks for a slightly different texture.
- Adjust sugar to taste if you prefer a less sweet casserole.
- Great as a side dish for ham dinners or holiday gatherings.
