- 2 boneless, skinless chicken breasts
- 1 tablespoon olive oil
- 1 tablespoon butter
- 8 oz cremini or white mushrooms, sliced
- 3 cloves garlic, minced
- 1/2 cup chicken broth
- 1/2 cup heavy cream
- 1/4 cup grated Parmesan cheese
- 1 teaspoon dried thyme
- Salt and pepper to taste
- Fresh parsley, chopped (optional, for garnish)
Instructions
- Season the chicken breasts with salt and pepper on both sides.
- In a large skillet, heat olive oil over medium-high heat.
- Add the chicken and cook for 5-6 minutes on each side, or until golden and cooked through. Remove and set aside.
- In the same skillet, add butter and sauté mushrooms until browned, about 5-7 minutes.
- Add garlic and thyme, cooking for another 1-2 minutes until fragrant.
- Pour in the chicken broth and bring to a simmer, scraping up any browned bits from the pan.
- Stir in the heavy cream and Parmesan cheese, cooking until the sauce thickens slightly.
- Return the chicken to the skillet and simmer for another 2-3 minutes, spooning the sauce over the top.
- Garnish with chopped parsley if desired and serve warm.
Notes
- For a lighter version, substitute half-and-half for the heavy cream.
- Serve over mashed potatoes, rice, or pasta for a complete meal.
- Use fresh thyme for enhanced flavor if available.
