Ingredients

  • 2 boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • 8 oz cremini or white mushrooms, sliced
  • 3 cloves garlic, minced
  • 1/2 cup chicken broth
  • 1/2 cup heavy cream
  • 1/4 cup grated Parmesan cheese
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • Fresh parsley, chopped (optional, for garnish)

Instructions

  1. Season the chicken breasts with salt and pepper on both sides.
  2. In a large skillet, heat olive oil over medium-high heat.
  3. Add the chicken and cook for 5-6 minutes on each side, or until golden and cooked through. Remove and set aside.
  4. In the same skillet, add butter and sauté mushrooms until browned, about 5-7 minutes.
  5. Add garlic and thyme, cooking for another 1-2 minutes until fragrant.
  6. Pour in the chicken broth and bring to a simmer, scraping up any browned bits from the pan.
  7. Stir in the heavy cream and Parmesan cheese, cooking until the sauce thickens slightly.
  8. Return the chicken to the skillet and simmer for another 2-3 minutes, spooning the sauce over the top.
  9. Garnish with chopped parsley if desired and serve warm.

Notes

  • For a lighter version, substitute half-and-half for the heavy cream.
