Description

A savory and satisfying quiche with a crispy hash brown crust, packed with spring vegetables and cheese. Perfect for brunch or a light dinner.


Ingredients

  • 3 cups frozen hash browns, thawed and drained
  • 2 tablespoons butter, melted
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon olive oil
  • 1/2 cup chopped onion
  • 1 cup chopped asparagus
  • 1/2 cup chopped bell pepper
  • 6 large eggs
  • 1/2 cup milk
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup grated Parmesan cheese
  • 1/4 teaspoon dried thyme
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C). Grease a 9-inch pie dish.
  2. In a bowl, mix the hash browns, melted butter, salt, and pepper. Press into the bottom and up the sides of the pie dish to form a crust.
  3. Bake the crust for 20-25 minutes until golden and crisp.
  4. While the crust bakes, heat olive oil in a skillet over medium heat. Sauté the onion, asparagus, and bell pepper until tender, about 5-7 minutes.
  5. In a bowl, whisk the eggs, milk, thyme, cheddar, Parmesan, and salt and pepper.
  6. Spread the sautéed vegetables over the crust. Pour the egg mixture over the top.
  7. Bake the quiche at 375°F (190°C) for 25-30 minutes, or until the center is set and the top is lightly golden.
  8. Let cool for 5-10 minutes before slicing and serving.

Notes

  • You can add cooked bacon or ham for extra protein.
  • Substitute other spring vegetables like peas or spinach if desired.
  • Use freshly grated cheese for best melting and flavor.
