- 1 1/2 cups chicken broth
- 1/2 cup tzatziki sauce (store-bought or homemade)
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/2 teaspoon dried oregano
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 cup diced cucumber (optional, for garnish)
- 1/4 cup crumbled feta cheese (optional, for garnish)
- Fresh dill or parsley (optional, for garnish)
Instructions
- Preheat oven to 375°F (190°C).
- Lightly grease a 9×13-inch baking dish.
- In the prepared baking dish, combine uncooked rice, chicken broth, tzatziki sauce, olive oil, garlic powder, onion powder, oregano, salt, and pepper. Stir to mix evenly.
- Add the raw chicken pieces and mix to coat.
- Cover the dish tightly with foil and bake for 40–45 minutes, or until the rice is tender and the chicken is cooked through.
- Remove from oven and let sit covered for 5 minutes.
- Fluff the rice, garnish with cucumber, feta, and fresh herbs if desired. Serve warm.
