Description

This Dump-and-Bake Chicken Tzatziki with Rice is a quick, healthy, and flavorful Mediterranean-inspired dish that comes together in one pan with minimal prep. Perfect for busy weeknights, it combines tender chicken, creamy tzatziki, and seasoned rice baked to perfection.

Ingredients

Units Scale
  • 1 1/2 lbs boneless, skinless chicken breasts (cut into bite-sized pieces)
  • 1 cup long-grain white rice (uncooked)
  • 1 1/2 cups chicken broth
  • 1/2 cup tzatziki sauce (store-bought or homemade)
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup diced cucumber (optional, for garnish)
  • 1/4 cup crumbled feta cheese (optional, for garnish)
  • Fresh dill or parsley (optional, for garnish)

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Lightly grease a 9×13-inch baking dish.
  3. In the prepared baking dish, combine uncooked rice, chicken broth, tzatziki sauce, olive oil, garlic powder, onion powder, oregano, salt, and pepper. Stir to mix evenly.
  4. Add the raw chicken pieces and mix to coat.
  5. Cover the dish tightly with foil and bake for 40–45 minutes, or until the rice is tender and the chicken is cooked through.
  6. Remove from oven and let sit covered for 5 minutes.
  7. Fluff the rice, garnish with cucumber, feta, and fresh herbs if desired. Serve warm.

Notes

  • Use homemade or store-bought tzatziki for convenience.
  • You can substitute chicken thighs for breasts if preferred.
  • Make it spicy by adding red pepper flakes or a dash of hot sauce.
  • Double the recipe for meal prep or leftovers.
