Duchess Potatoes are a classic French side dish made from mashed potatoes mixed with butter, egg yolks, and seasonings, piped into elegant shapes and baked until golden brown.

- 2 pounds russet potatoes, peeled and cut into chunks
- 4 tablespoons unsalted butter
- 1/2 cup heavy cream
- 3 large egg yolks
- 1/4 teaspoon ground nutmeg
- Salt and pepper to taste
- 1 egg yolk (for brushing)
- 1 tablespoon water (for brushing)
Instructions
- Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Boil the potatoes in salted water until tender, about 15-20 minutes. Drain well.
- Mash the potatoes until smooth and lump-free.
- Stir in butter, heavy cream, egg yolks, nutmeg, salt, and pepper until fully combined.
- Transfer the mixture to a piping bag fitted with a large star tip.
- Pipe rosettes or desired shapes onto the prepared baking sheet.
- Mix 1 egg yolk with 1 tablespoon of water and brush the tops of the piped potatoes.
- Bake for 18-20 minutes, or until golden brown.
- Serve warm as a delicious side dish.
Notes
- Ensure potatoes are very dry before mashing for best texture.
- You can prepare them ahead of time and bake just before serving.
- Try adding grated cheese for a richer flavor.
