Description

Duchess Potatoes are a classic French side dish made from mashed potatoes mixed with butter, egg yolks, and seasonings, piped into elegant shapes and baked until golden brown.


Ingredients

  • 2 pounds russet potatoes, peeled and cut into chunks
  • 4 tablespoons unsalted butter
  • 1/2 cup heavy cream
  • 3 large egg yolks
  • 1/4 teaspoon ground nutmeg
  • Salt and pepper to taste
  • 1 egg yolk (for brushing)
  • 1 tablespoon water (for brushing)

Instructions

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Boil the potatoes in salted water until tender, about 15-20 minutes. Drain well.
  3. Mash the potatoes until smooth and lump-free.
  4. Stir in butter, heavy cream, egg yolks, nutmeg, salt, and pepper until fully combined.
  5. Transfer the mixture to a piping bag fitted with a large star tip.
  6. Pipe rosettes or desired shapes onto the prepared baking sheet.
  7. Mix 1 egg yolk with 1 tablespoon of water and brush the tops of the piped potatoes.
  8. Bake for 18-20 minutes, or until golden brown.
  9. Serve warm as a delicious side dish.

Notes

  • Ensure potatoes are very dry before mashing for best texture.
  • You can prepare them ahead of time and bake just before serving.
  • Try adding grated cheese for a richer flavor.
