Description

A rich and creamy soup inspired by Tuscan flavors, featuring Parmesan cheese, tender potatoes, Italian sausage, and kale in a savory broth.


Ingredients

  • 1 lb Italian sausage, casings removed
  • 1 tbsp olive oil
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 3 cups russet potatoes, diced
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 2 cups chopped kale
  • Salt and pepper to taste
  • 1/2 tsp red pepper flakes (optional)

Instructions

  1. In a large pot, heat olive oil over medium heat and brown the Italian sausage. Remove and set aside.
  2. In the same pot, sauté diced onions until translucent, then add garlic and cook for 1 minute.
  3. Pour in chicken broth and add diced potatoes. Bring to a boil, then reduce heat and simmer until potatoes are tender, about 10-15 minutes.
  4. Return the sausage to the pot and stir in the heavy cream and Parmesan cheese. Simmer for 5 minutes.
  5. Add chopped kale and cook until wilted, about 2-3 minutes.
  6. Season with salt, pepper, and red pepper flakes if using. Serve hot.

Notes

  • Use mild or spicy Italian sausage based on preference.
  • Substitute spinach for kale if desired.
  • For a thicker soup, mash some of the potatoes in the pot before adding the cream.
