- 1 lb Italian sausage, casings removed
- 1 tbsp olive oil
- 1 medium onion, diced
- 3 cloves garlic, minced
- 4 cups chicken broth
- 3 cups russet potatoes, diced
- 1 cup heavy cream
- 1 cup grated Parmesan cheese
- 2 cups chopped kale
- Salt and pepper to taste
- 1/2 tsp red pepper flakes (optional)
Instructions
- In a large pot, heat olive oil over medium heat and brown the Italian sausage. Remove and set aside.
- In the same pot, sauté diced onions until translucent, then add garlic and cook for 1 minute.
- Pour in chicken broth and add diced potatoes. Bring to a boil, then reduce heat and simmer until potatoes are tender, about 10-15 minutes.
- Return the sausage to the pot and stir in the heavy cream and Parmesan cheese. Simmer for 5 minutes.
- Add chopped kale and cook until wilted, about 2-3 minutes.
- Season with salt, pepper, and red pepper flakes if using. Serve hot.
Notes
- Use mild or spicy Italian sausage based on preference.
- Substitute spinach for kale if desired.
- For a thicker soup, mash some of the potatoes in the pot before adding the cream.
