Description
Tacos Al Pastor are a popular Mexican street food featuring marinated pork, grilled to perfection and served in warm corn tortillas with pineapple, onion, and cilantro.

- 2 lbs pork shoulder, thinly sliced
- 3 dried guajillo chilies, seeded and soaked
- 2 cloves garlic
- 1/4 cup white vinegar
- 1/4 cup orange juice
- 1/4 cup pineapple juice
- 1 tbsp achiote paste
- 1 tsp dried oregano
- 1/2 tsp ground cumin
- 1/4 tsp ground cloves
- Salt and pepper to taste
- 1/2 pineapple, sliced
- Corn tortillas
- 1/2 onion, chopped
- 1/4 cup fresh cilantro, chopped
- Lime wedges, for serving
Instructions
- Blend guajillo chilies, garlic, vinegar, orange juice, pineapple juice, achiote paste, oregano, cumin, cloves, salt, and pepper into a marinade.
- Marinate the sliced pork in the mixture for at least 4 hours, preferably overnight.
- Preheat grill or skillet over medium-high heat.
- Grill pork slices and pineapple until cooked and slightly charred.
- Chop the grilled pork and pineapple into bite-sized pieces.
- Warm the corn tortillas.
- Assemble tacos with pork, pineapple, chopped onion, and cilantro.
- Serve with lime wedges.
Notes
- For best flavor, marinate the pork overnight.
- You can substitute guajillo chilies with ancho chilies if needed.
- Use fresh pineapple for best taste.
