Description

Pad See Ew is a popular Thai street food featuring wide rice noodles stir-fried with soy sauce, Chinese broccoli, and a choice of protein. This recipe delivers a smoky, savory flavor and comes together quickly for a delicious meal.

Ingredients

Units Scale
  • 8 oz wide rice noodles
  • 2 tbsp vegetable oil
  • 2 cloves garlic, minced
  • 6 oz chicken breast or tofu, thinly sliced
  • 2 cups Chinese broccoli, chopped
  • 2 large eggs
  • 2 tbsp dark soy sauce
  • 1 tbsp light soy sauce
  • 1 tsp oyster sauce (or vegetarian oyster sauce)
  • 1/2 tsp sugar
  • 1/4 tsp white pepper

Instructions

  1. Soak rice noodles in warm water until softened, about 30 minutes. Drain and set aside.
  2. Heat vegetable oil in a large wok or skillet over medium-high heat.
  3. Add garlic and stir-fry for 30 seconds until fragrant.
  4. Add chicken or tofu and cook until no longer pink or golden brown.
  5. Add Chinese broccoli and stir-fry for 1-2 minutes until slightly wilted.
  6. Push everything to one side of the wok, crack in the eggs, and scramble until just set.
  7. Add the drained noodles and sauces (dark soy, light soy, oyster sauce, sugar, white pepper).
  8. Toss everything together, stir-frying until noodles are well coated and slightly charred.
  9. Serve hot, optionally garnished with chili flakes or lime wedges.

Notes

  • Use fresh wide rice noodles if available for best texture.
  • Adjust soy sauce quantities to taste if you prefer less salty flavor.
  • Substitute Chinese broccoli with broccolini or kale if needed.
