- 8 oz wide rice noodles
- 2 tbsp vegetable oil
- 2 cloves garlic, minced
- 6 oz chicken breast or tofu, thinly sliced
- 2 cups Chinese broccoli, chopped
- 2 large eggs
- 2 tbsp dark soy sauce
- 1 tbsp light soy sauce
- 1 tsp oyster sauce (or vegetarian oyster sauce)
- 1/2 tsp sugar
- 1/4 tsp white pepper
Instructions
- Soak rice noodles in warm water until softened, about 30 minutes. Drain and set aside.
- Heat vegetable oil in a large wok or skillet over medium-high heat.
- Add garlic and stir-fry for 30 seconds until fragrant.
- Add chicken or tofu and cook until no longer pink or golden brown.
- Add Chinese broccoli and stir-fry for 1-2 minutes until slightly wilted.
- Push everything to one side of the wok, crack in the eggs, and scramble until just set.
- Add the drained noodles and sauces (dark soy, light soy, oyster sauce, sugar, white pepper).
- Toss everything together, stir-frying until noodles are well coated and slightly charred.
- Serve hot, optionally garnished with chili flakes or lime wedges.
Notes
- Use fresh wide rice noodles if available for best texture.
- Adjust soy sauce quantities to taste if you prefer less salty flavor.
- Substitute Chinese broccoli with broccolini or kale if needed.
