- 2 tablespoons olive oil
- 1 lb boneless, skinless chicken breasts, cut into bite-sized pieces
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon paprika
- 4 tablespoons unsalted butter
- 6 cloves garlic, minced
- 1/4 teaspoon red pepper flakes (optional)
- 1/2 cup grated Parmesan cheese
- 1/4 cup chopped fresh parsley
- 8 oz pasta (penne or your choice)
- 1/2 cup pasta cooking water (reserved)
Instructions
- Cook pasta according to package instructions. Reserve 1/2 cup of pasta water and drain the rest.
- In a large skillet, heat olive oil over medium-high heat.
- Season chicken pieces with salt, pepper, and paprika.
- Add chicken to the skillet and cook for 5-7 minutes until golden and cooked through. Remove and set aside.
- In the same skillet, reduce heat to medium and add butter.
- Add minced garlic and red pepper flakes (if using) and sauté for 1-2 minutes until fragrant.
- Return the chicken to the skillet and toss to coat in garlic butter.
- Add the cooked pasta and reserved pasta water. Stir to combine.
- Mix in Parmesan cheese and chopped parsley.
- Cook for another 1-2 minutes until everything is heated through and coated.
- Serve warm and enjoy!
Notes
- Use freshly grated Parmesan for best flavor and melting.
- You can substitute chicken with shrimp for a seafood twist.
- Adjust red pepper flakes to taste for desired spice level.
