Ingredients

Scale

Main Ingredients

  • 1 pound Frozen Tater Tots (These add a satisfying crunch; feel free to swap with diced roasted potatoes.)
  • 1 tablespoon Olive Oil (Can substitute with any neutral oil.)
  • 1 pound Breakfast Sausage (Consider using turkey sausage for a lighter option.)
  • 6 large Eggs
  • 1/2 cup Half and Half (Can substitute with equal parts milk and cream or just milk.)
  • to taste Kosher Salt
  • to taste Freshly Ground Black Pepper
  • 1 can Refried Beans (Can substitute with black beans for a different flavor.)
  • 4 large Flour Tortillas (Whole wheat tortillas are a nutritious substitute.)
  • 1 cup Shredded Cheddar Cheese
  • 1 cup Shredded Monterey Jack Cheese
  • 1 cup Roma Tomatoes (Can leave out for a simpler burrito.)
  • 1/4 cup Chopped Fresh Cilantro Leaves (Can substitute with green onions.)

Instructions

  1. Preheat and Prepare Baking Sheet: Preheat your oven to 400°F (200°C) and lightly oil a baking sheet to prevent sticking when you bake the burritos later.
  2. Cook Tater Tots: Arrange the frozen tater tots on the baking sheet and cook according to package directions, about 20 minutes, until they are crispy and golden brown. Then remove and let them cool slightly.
  3. Brown the Sausage: Heat the olive oil in a skillet over medium-high heat. Add the breakfast sausage and cook for 3-5 minutes until browned, breaking it up as it cooks.
  4. Make the Scrambled Eggs: In a bowl, whisk the eggs, then pour them into the skillet with the browned sausage. Cook, stirring gently, until the eggs are just set. Stir in the half and half and continue cooking until the mixture thickens. Season with kosher salt and freshly ground black pepper to taste.
  5. Assemble the Burritos: Lay each flour tortilla flat and spread a layer of refried beans down the center. Top with a layer of crispy tater tots, followed by the sausage and egg mixture, then sprinkle with shredded cheddar and Monterey Jack cheeses. Add chopped Roma tomatoes and fresh cilantro to each.
  6. Fold the Burritos: Fold the sides of each tortilla inwards and roll tightly from one end to the other to form a burrito. Place each burrito seam-side down on the prepared baking sheet.
  7. Bake the Burritos: Bake the assembled burritos in the preheated oven for 12-15 minutes until they are heated through and the tortillas are slightly golden and crispy on the outside.
  8. Serve or Freeze: Serve warm immediately, or if preparing for later, allow the burritos to cool completely. Then store them in an airtight container or freezer bag for easy reheating on busy mornings.

Notes

  • For a lighter version, use turkey sausage and whole wheat tortillas.
  • Substitute black beans for refried beans if preferred.
  • You can omit the tomatoes to simplify the filling.
  • These burritos freeze well and can be reheated in the oven or microwave.
  • Seal burritos tightly when folding to prevent filling from spilling during baking.
