Description

A hearty and comforting French-inspired dish made with flavorful chicken meatballs, white beans, and vegetables in a savory tomato broth.


Ingredients

  • 1 lb ground chicken
  • 1/4 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1 egg
  • 2 cloves garlic, minced
  • 1 tsp dried thyme
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 tbsp olive oil
  • 1 onion, diced
  • 2 carrots, sliced
  • 2 celery stalks, sliced
  • 1 (15 oz) can diced tomatoes
  • 2 (15 oz) cans white beans, drained and rinsed
  • 2 cups chicken broth
  • 1 bay leaf
  • 1 tbsp fresh parsley, chopped

Instructions

  1. In a bowl, mix ground chicken, breadcrumbs, Parmesan, egg, garlic, thyme, salt, and pepper until well combined. Form into small meatballs.
  2. Heat 1 tablespoon of olive oil in a large pot over medium heat. Brown meatballs in batches, about 5-6 minutes total. Remove and set aside.
  3. Add remaining oil to the pot. Sauté onion, carrots, and celery until softened, about 5 minutes.
  4. Stir in diced tomatoes, white beans, chicken broth, and bay leaf. Bring to a simmer.
  5. Return meatballs to the pot. Cover and simmer for 20-25 minutes until meatballs are cooked through and flavors meld.
  6. Remove bay leaf. Sprinkle with fresh parsley and serve warm.

Notes

  • For extra depth of flavor, add a splash of white wine while sautéing vegetables.
  • Use fresh thyme instead of dried for a more aromatic profile.
  • Serve with crusty bread for a complete meal.
