Instructions
- Prepare the filling: In a medium bowl, combine chopped cooked shrimp, Alfredo sauce, cooked white rice, shredded mozzarella, grated Parmesan, garlic powder, and black pepper. Mix thoroughly until all ingredients are evenly incorporated.
- Assemble burrito bites: Spoon about 2–3 tablespoons of the shrimp Alfredo mixture onto each 6-inch flour tortilla. Roll each tortilla tightly like a burrito, folding in the sides to secure the contents. If needed, insert toothpicks to hold the burrito bites firmly closed. Place them seam-side down on a plate.
- Set up breading station: Arrange three shallow bowls – one with all-purpose flour, one with beaten eggs, and one with seasoned breadcrumbs. Working one at a time, coat each burrito bite first in flour, shaking off excess, then dip into the beaten eggs, and finally roll in breadcrumbs until fully coated.
- Heat oil and fry: Pour about 2 inches of vegetable oil into a deep pan or fryer. Heat oil to 350°F (175°C). Carefully fry the breaded burrito bites in batches to avoid overcrowding, cooking them for 2–3 minutes per side until they turn golden brown and achieve a crispy crust.
