Burrito Wraps

Instructions

  1. Prepare the filling: In a medium bowl, combine chopped cooked shrimp, Alfredo sauce, cooked white rice, shredded mozzarella, grated Parmesan, garlic powder, and black pepper. Mix thoroughly until all ingredients are evenly incorporated.
  2. Assemble burrito bites: Spoon about 2–3 tablespoons of the shrimp Alfredo mixture onto each 6-inch flour tortilla. Roll each tortilla tightly like a burrito, folding in the sides to secure the contents. If needed, insert toothpicks to hold the burrito bites firmly closed. Place them seam-side down on a plate.
  3. Set up breading station: Arrange three shallow bowls – one with all-purpose flour, one with beaten eggs, and one with seasoned breadcrumbs. Working one at a time, coat each burrito bite first in flour, shaking off excess, then dip into the beaten eggs, and finally roll in breadcrumbs until fully coated.
  4. Heat oil and fry: Pour about 2 inches of vegetable oil into a deep pan or fryer. Heat oil to 350°F (175°C). Carefully fry the breaded burrito bites in batches to avoid overcrowding, cooking them for 2–3 minutes per side until they turn golden brown and achieve a crispy crust.
