Ingredients

  • 1/2 cup granulated erythritol
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/3 cup almond flour
  • 1/4 cup unsweetened cocoa powder
  • 1/4 tsp salt
  • 1/2 tsp baking powder
  • 1/4 cup sugar-free chocolate chips (optional)

Instructions

  1. Preheat the oven to 350°F (175°C) and line an 8×8 inch baking pan with parchment paper.
  2. Melt the butter in a microwave-safe bowl or on the stovetop. Allow it to cool slightly.
  3. Whisk in the erythritol, eggs, and vanilla extract until well combined.
  4. Add almond flour, cocoa powder, salt, and baking powder to the wet ingredients and mix until a smooth batter forms.
  5. Fold in the sugar-free chocolate chips if using.
  6. Pour the batter into the prepared pan and smooth the top with a spatula.
