- 1/2 cup granulated erythritol
- 2 large eggs
- 1 tsp vanilla extract
- 1/3 cup almond flour
- 1/4 cup unsweetened cocoa powder
- 1/4 tsp salt
- 1/2 tsp baking powder
- 1/4 cup sugar-free chocolate chips (optional)
Instructions
- Preheat the oven to 350°F (175°C) and line an 8×8 inch baking pan with parchment paper.
- Melt the butter in a microwave-safe bowl or on the stovetop. Allow it to cool slightly.
- Whisk in the erythritol, eggs, and vanilla extract until well combined.
- Add almond flour, cocoa powder, salt, and baking powder to the wet ingredients and mix until a smooth batter forms.
- Fold in the sugar-free chocolate chips if using.
- Pour the batter into the prepared pan and smooth the top with a spatula.
- Bake for 20–25 minutes, or until a toothpick inserted in the center comes out mostly clean.
- Allow brownies to cool completely in the pan before cutting into squares.
