- 6 pork or beef sausages
- 1 tablespoon olive oil
- 1 onion, thinly sliced
- 2 cloves garlic, minced
- 1 tablespoon curry powder
- 1 tablespoon all-purpose flour
- 1 1/2 cups beef or chicken broth
- 1/2 cup frozen peas
- 1 carrot, sliced
- Salt and pepper to taste
- Fresh parsley for garnish (optional)
Instructions
- Heat oil in a large skillet over medium heat. Add sausages and cook until browned on all sides. Remove and set aside.
- In the same skillet, add onion and carrot. Cook until softened, about 5 minutes.
- Add garlic and curry powder. Stir for 1 minute until fragrant.
- Sprinkle in the flour and cook for another minute, stirring constantly.
- Gradually whisk in the broth to form a smooth sauce.
- Return sausages to the skillet, cover, and simmer for 15–20 minutes until sausages are cooked through and sauce is thickened.
- Stir in peas and cook for another 2–3 minutes. Season with salt and pepper.
- Garnish with parsley and serve hot over mashed potatoes, rice, or noodles.
Notes
- Use mild or hot curry powder depending on your spice preference.
- Sliced sausage can be used for quicker cooking and serving.
- Add a splash of cream or coconut milk for a richer sauce.
