Description

Curried Sausages is a comforting and flavorful dish featuring browned sausages simmered in a rich curry-spiced onion gravy, perfect served over mashed potatoes or rice.


Ingredients

  • 6 pork or beef sausages
  • 1 tablespoon olive oil
  • 1 onion, thinly sliced
  • 2 cloves garlic, minced
  • 1 tablespoon curry powder
  • 1 tablespoon all-purpose flour
  • 1 1/2 cups beef or chicken broth
  • 1/2 cup frozen peas
  • 1 carrot, sliced
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Instructions

  1. Heat oil in a large skillet over medium heat. Add sausages and cook until browned on all sides. Remove and set aside.
  2. In the same skillet, add onion and carrot. Cook until softened, about 5 minutes.
  3. Add garlic and curry powder. Stir for 1 minute until fragrant.
  4. Sprinkle in the flour and cook for another minute, stirring constantly.
  5. Gradually whisk in the broth to form a smooth sauce.
  6. Return sausages to the skillet, cover, and simmer for 15–20 minutes until sausages are cooked through and sauce is thickened.
  7. Stir in peas and cook for another 2–3 minutes. Season with salt and pepper.
  8. Garnish with parsley and serve hot over mashed potatoes, rice, or noodles.

Notes

  • Use mild or hot curry powder depending on your spice preference.
  • Sliced sausage can be used for quicker cooking and serving.
  • Add a splash of cream or coconut milk for a richer sauce.
