- 2 cups cherry tomatoes, halved
- 1 large cucumber, sliced
- 1/4 red onion, thinly sliced
- 2 tablespoons olive oil
- 1 tablespoon red wine vinegar
- 1 teaspoon dried oregano
- Salt and pepper to taste
- 2 tablespoons chopped fresh parsley (optional)
Instructions
- In a large bowl, combine cherry tomatoes, cucumber, and red onion.
- In a small bowl, whisk together olive oil, red wine vinegar, oregano, salt, and pepper.
- Pour the dressing over the vegetables and toss to combine.
- Let the salad sit for at least 10 minutes to allow the flavors to meld.
- Garnish with chopped parsley before serving, if desired.
Notes
- Use English cucumber or peel and seed regular cucumber for best texture.
- Can be made ahead and stored in the fridge for up to a day.
- Add feta cheese or olives for a Mediterranean twist.
