Description

- 1 cucumber, thinly sliced
- 8 slices white or whole wheat bread, crusts removed
- 4 oz (115g) cream cheese, softened
- 2 tbsp mayonnaise
- 1 tbsp fresh dill, chopped (optional)
- Salt and pepper to taste
- 1 tbsp lemon juice (optional)
Instructions
- In a small bowl, mix the cream cheese, mayonnaise, dill, lemon juice, salt, and pepper until smooth.
- Spread the cream cheese mixture evenly on each slice of bread.
- Layer cucumber slices on half of the bread slices.
- Top with the remaining bread slices to make sandwiches.
- Press gently and cut each sandwich into halves or quarters as desired.
- Serve immediately or cover and refrigerate until serving.
Notes
- Use English cucumbers for fewer seeds and thinner skin.
- You can peel the cucumbers for a more traditional look.
- For extra flavor, sprinkle cucumber slices with a little salt and let them sit for a few minutes before assembling.
