Description

Light and refreshing cucumber sandwiches made with soft bread, cream cheese, and crisp cucumber slices. Perfect for tea parties, picnics, or light snacks.


Ingredients

  • 1 cucumber, thinly sliced
  • 8 slices white or whole wheat bread, crusts removed
  • 4 oz (115g) cream cheese, softened
  • 2 tbsp mayonnaise
  • 1 tbsp fresh dill, chopped (optional)
  • Salt and pepper to taste
  • 1 tbsp lemon juice (optional)

Instructions

  1. In a small bowl, mix the cream cheese, mayonnaise, dill, lemon juice, salt, and pepper until smooth.
  2. Spread the cream cheese mixture evenly on each slice of bread.
  3. Layer cucumber slices on half of the bread slices.
  4. Top with the remaining bread slices to make sandwiches.
  5. Press gently and cut each sandwich into halves or quarters as desired.
  6. Serve immediately or cover and refrigerate until serving.

Notes

  • Use English cucumbers for fewer seeds and thinner skin.
  • You can peel the cucumbers for a more traditional look.
  • For extra flavor, sprinkle cucumber slices with a little salt and let them sit for a few minutes before assembling.
