Description

A refreshing and crunchy cucumber peanut salad with a hint of spice, perfect for a healthy snack or side dish.

Ingredients

Scale
  • 2 medium cucumbers, thinly sliced
  • 1/2 cup roasted peanuts, coarsely crushed
  • 1 green chili, finely chopped
  • 1 tablespoon lemon juice
  • 2 tablespoons chopped fresh cilantro
  • 1/2 teaspoon salt (adjust to taste)
  • 1/4 teaspoon black pepper
  • 1 teaspoon sugar (optional)

Instructions

  1. Peel (if desired) and thinly slice the cucumbers into rounds or half-moons.
  2. In a large bowl, combine the cucumber slices with crushed peanuts, green chili, and chopped cilantro.
  3. Add salt, black pepper, and sugar (if using), and mix well.
  4. Drizzle with lemon juice and toss everything together until well combined.
  5. Serve immediately for best crunch and flavor.

Notes

  • Use English or Persian cucumbers for fewer seeds and more crunch.
  • Adjust chili according to your spice preference.
  • Add grated coconut for a South Indian variation.
  • Can be chilled for 15–20 minutes before serving.
