  • 1 lb kielbasa, sliced into 1/2-inch rounds
  • 1 lb fresh green beans, trimmed
  • 1 lb baby potatoes, halved
  • 1 small onion, sliced
  • 2 cloves garlic, minced
  • 1/2 cup chicken broth
  • 1 tbsp olive oil
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 tsp paprika (optional)

Instructions

  1. Place the sliced kielbasa, green beans, baby potatoes, and onion into the crockpot.
  2. Add the minced garlic, chicken broth, olive oil, salt, pepper, and paprika (if using).
  3. Stir to combine all ingredients well.
  4. Cover and cook on low for 6-7 hours or on high for 3-4 hours, until potatoes are tender.
  5. Stir before serving and enjoy hot.

Notes

  • Smoked turkey sausage can be used as a lighter alternative to kielbasa.
  • Add a pinch of red pepper flakes for a bit of heat.
  • This dish stores well and tastes great reheated the next day.
