  • 1 teaspoon salt

Breading

  • 1/2 cup all-purpose flour
  • 2 large eggs
  • 1/2 cup buttermilk
  • 1 cup cornmeal
  • 1/2 cup breadcrumbs
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon paprika
  • 1/2 teaspoon black pepper

For Frying

  • Vegetable oil for frying (about 1/2 inch in skillet)


Instructions

  1. Prepare Tomatoes: Sprinkle tomato slices with salt and let sit for 10 minutes to draw out excess moisture, then pat dry thoroughly with paper towels.
  2. Set Up Breading Station: Place flour in one bowl. In a second bowl, whisk together the eggs and buttermilk. In a third bowl, combine cornmeal, breadcrumbs, garlic powder, paprika, and black pepper.
  3. Bread Tomato Slices: Dredge each tomato slice first in the flour, shaking off excess, then dip into the egg and buttermilk mixture, and finally coat evenly with the seasoned cornmeal and breadcrumb mixture, pressing gently to ensure it adheres well.
  4. Heat Oil: Heat about 1/2 inch of vegetable oil in a skillet over medium heat until it reaches approximately 350°F (175°C) and is hot but not smoking.
  5. Fry Tomatoes: Fry the breaded tomato slices in batches for 2 to 3 minutes per side, or until golden and crispy. Avoid overcrowding the pan to maintain oil temperature.
  6. Drain and Serve: Remove fried tomatoes and place on paper towels to drain excess oil. Serve hot with your choice of dipping sauces such as ranch, remoulade, or spicy mayo.
