Ingredients
Scale
Reuben Balls
- 1 cup shredded corned beef
- 1 cup drained sauerkraut
- 1 cup shredded Swiss cheese
- 1 cup plain or panko breadcrumbs
- 2 large eggs, beaten
- Vegetable oil for frying (enough to deep fry)
Spicy Thousand Island Dip
- ½ cup spicy Thousand Island dressing
Instructions
- Mix Ingredients: In a large bowl, combine the shredded corned beef, drained sauerkraut, and shredded Swiss cheese. Mix thoroughly until all ingredients are well incorporated.
- Shape Balls: Roll the mixture into golf ball-sized portions using your hands and place them aside on a clean surface or plate.
- Coat Balls: Dip each ball into the beaten eggs to coat completely, then roll it in the breadcrumbs until evenly covered. Set aside on a tray.
- Heat Oil: Heat vegetable oil in a deep fryer or large pot to 350°F (175°C). The oil needs to be hot enough for crisp frying but not smoking.
- Fry Balls: Fry the prepared balls in batches, making sure not to overcrowd the fryer. Fry for 3-4 minutes or until the balls become golden brown and crispy on the outside.
- Drain: Remove the fried balls with a slotted spoon and place them on paper towels to drain excess oil.
- Prepare Dip: While frying, prepare the spicy Thousand Island dip by adjusting the dressing to taste or adding extra spice if desired.
- Serve: Serve the crispy Reuben balls warm alongside the spicy Thousand Island dip for dipping.
Notes
- Ensure sauerkraut is well drained to prevent sogginess in the Reuben balls.
- You can use either plain or panko breadcrumbs depending on desired texture; panko will give a lighter, crispier crust.
- Adjust the spice level of the Thousand Island dressing by adding hot sauce or chili flakes if preferred.
- To keep fried balls warm before serving, place them on a baking sheet in a low oven (about 200°F) to maintain crispiness.
- For a gluten-free version, substitute breadcrumbs with gluten-free breadcrumbs.
