Description

Crispy Panko Baked Cod is a light and flavorful seafood dish featuring tender cod fillets coated in a crunchy panko breadcrumb crust, baked to golden perfection.


Ingredients

  • 4 cod fillets (about 6 oz each)
  • 1 cup panko breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup fresh parsley, chopped
  • 1 tsp garlic powder
  • 1/2 tsp paprika
  • Salt and pepper to taste
  • 1/4 cup mayonnaise
  • 1 tbsp Dijon mustard
  • 1 tbsp lemon juice
  • Olive oil spray

Instructions

  1. Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper or lightly grease it.
  2. In a shallow bowl, mix panko breadcrumbs, Parmesan cheese, parsley, garlic powder, paprika, salt, and pepper.
  3. In a separate bowl, combine mayonnaise, Dijon mustard, and lemon juice.
  4. Pat the cod fillets dry with paper towels and season with salt and pepper.
  5. Brush the top of each cod fillet with the mayo mixture.
  6. Press the coated side of the fillets into the panko mixture until well coated, then place on the prepared baking sheet, crust-side up.
  7. Lightly spray the tops with olive oil spray to enhance crispiness.
  8. Bake for 15-18 minutes or until the cod flakes easily with a fork and the crust is golden brown.
  9. Serve immediately with lemon wedges or your favorite side.

Notes

  • For extra crispiness, broil for 1-2 minutes at the end of baking.
  • Substitute Greek yogurt for mayonnaise for a lighter version.
  • Great served with steamed vegetables or a fresh salad.
