Ingredients

  • 4 bone-in, skin-on chicken thighs (or breasts/drumsticks)
  • 1 cup buttermilk
  • 1 teaspoon hot sauce (optional)
  • 1 cup breadcrumbs (Panko for extra crunch)
  • 1/2 cup all-purpose flour
  • 1 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Cooking spray or olive oil for baking

Instructions

  1. In a bowl or zip-top bag, marinate chicken in buttermilk and hot sauce for at least 1 hour, preferably overnight.
  2. Preheat oven to 400°F (200°C). Line a baking sheet with foil and place a wire rack on top. Spray with cooking spray.
