- 2 medium zucchinis, thinly sliced

- 2 large eggs
- 2 tablespoons milk
- 1 cup breadcrumbs (preferably panko)

- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- Vegetable oil, for frying
Instructions
- Slice the zucchinis into thin rounds and set aside.
- Set up a breading station with three bowls: one with flour, one with beaten eggs mixed with milk, and one with breadcrumbs, Parmesan, garlic powder, salt, and pepper.
- Dip each zucchini slice first in the flour, then in the egg mixture, and finally coat with the breadcrumb mixture.
- Heat vegetable oil in a large skillet over medium heat.
- Fry zucchini slices in batches until golden brown and crispy, about 2-3 minutes per side.
- Transfer to a paper towel-lined plate to drain excess oil.
- Serve hot with your favorite dipping sauce.
Notes
- For extra crispiness, use panko breadcrumbs.
- Serve with marinara, ranch, or garlic aioli for dipping.
