Instructions
- Preparation: Gather all ingredients and ensure the mozzarella balls are properly drained and patted dry.
- Create Eye Indents: Gently form small indents in each mozzarella ball using a small spoon or your finger to create spaces for the olives, mimicking eyeballs.
- Prepare Olives: Finely chop the kalamata olives and carefully place a small amount into each mozzarella indent, completing the ‘eyeball’ effect.
- Cut Pepperoni: Slice the pepperoni into 3/4 inch chunks that will form the skewer’s main structure and set aside some thin slices for decoration.
- Slice Pepper: Cut the red bell pepper into wedge-shaped pieces suitable for threading onto skewers.
- Assemble Skewers: Start threading each skewer by placing a red bell pepper wedge first, followed by a pepperoni chunk, then a mozzarella ‘eyeball’ topped with olive, and finish with a thicker pepperoni slice at the bottom for contrast and support.
