Ingredients

  • 1 lb Italian sausage (mild or spicy)
  • 1 tablespoon olive oil
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 2 medium carrots, sliced
  • 2 celery stalks, chopped
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 2 cups baby spinach
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Red pepper flakes (optional, for heat)

Instructions

  1. In a large pot, heat olive oil over medium heat. Add the Italian sausage and cook until browned, breaking it up as it cooks.
  2. Add diced onion, garlic, carrots, and celery. Sauté for 5–7 minutes until vegetables are tender.
  3. Pour in the chicken broth and bring to a boil. Reduce heat and let simmer for 10 minutes.
  4. Stir in the heavy cream and Parmesan cheese, mixing until the cheese is melted and the soup is creamy.
  5. Add the baby spinach and Italian seasoning. Cook for another 2–3 minutes until spinach wilts.
  6. Season with salt, pepper, and red pepper flakes if using.
  7. Serve hot with extra Parmesan on top if desired.
