Description

Delicious and creamy mushroom chicken meatballs made in just 30 minutes. These tender meatballs are simmered in a rich mushroom sauce, perfect for a quick dinner.


Ingredients

  • 1 lb ground chicken
  • 1/4 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1 egg
  • 2 cloves garlic, minced
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 tbsp olive oil
  • 2 tbsp butter
  • 8 oz mushrooms, sliced
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1/2 cup chicken broth
  • 1/2 cup heavy cream
  • 1/4 tsp dried thyme
  • Salt and pepper to taste
  • Chopped parsley for garnish (optional)

Instructions

  1. In a bowl, mix ground chicken, breadcrumbs, Parmesan, egg, garlic, salt, and pepper. Form into small meatballs.
  2. Heat olive oil in a skillet over medium heat. Add meatballs and cook until browned and cooked through, about 6-8 minutes. Remove and set aside.
  3. In the same skillet, melt butter. Add mushrooms and onions, sauté until softened, about 5 minutes.
  4. Add garlic and cook for 1 minute. Pour in chicken broth, bring to a simmer.
  5. Stir in heavy cream and thyme. Simmer for 5-7 minutes until the sauce thickens slightly.
  6. Return meatballs to the skillet, coat with sauce, and simmer for another 3-4 minutes.
  7. Garnish with chopped parsley if desired. Serve hot.

Notes

  • You can substitute ground turkey for chicken if preferred.
  • Serve over rice, mashed potatoes, or pasta for a complete meal.
  • Add a dash of white wine to the sauce for extra flavor.
