Description
Delicious and creamy mushroom chicken meatballs made in just 30 minutes. These tender meatballs are simmered in a rich mushroom sauce, perfect for a quick dinner.

- 1 lb ground chicken
- 1/4 cup breadcrumbs
- 1/4 cup grated Parmesan cheese
- 1 egg
- 2 cloves garlic, minced
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 tbsp olive oil
- 2 tbsp butter
- 8 oz mushrooms, sliced
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1/2 cup chicken broth
- 1/2 cup heavy cream
- 1/4 tsp dried thyme
- Salt and pepper to taste
- Chopped parsley for garnish (optional)
Instructions
- In a bowl, mix ground chicken, breadcrumbs, Parmesan, egg, garlic, salt, and pepper. Form into small meatballs.
- Heat olive oil in a skillet over medium heat. Add meatballs and cook until browned and cooked through, about 6-8 minutes. Remove and set aside.
- In the same skillet, melt butter. Add mushrooms and onions, sauté until softened, about 5 minutes.
- Add garlic and cook for 1 minute. Pour in chicken broth, bring to a simmer.
- Stir in heavy cream and thyme. Simmer for 5-7 minutes until the sauce thickens slightly.
- Return meatballs to the skillet, coat with sauce, and simmer for another 3-4 minutes.
- Garnish with chopped parsley if desired. Serve hot.
Notes
- You can substitute ground turkey for chicken if preferred.
- Serve over rice, mashed potatoes, or pasta for a complete meal.
- Add a dash of white wine to the sauce for extra flavor.
