Description

Ingredients

  • 1 lb ground beef
  • 1 cup orzo pasta
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 2 cups beef broth
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1 tbsp olive oil
  • 1/2 tsp dried oregano
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add diced onion and sauté for 2-3 minutes until translucent.
  2. Add minced garlic and cook for another 30 seconds.
  3. Add ground beef to the skillet and cook until browned, breaking it up with a spoon.
  4. Stir in the orzo and cook for 1-2 minutes to toast slightly.
  5. Pour in beef broth and bring to a boil. Reduce heat to a simmer, cover, and cook for 10-12 minutes until orzo is tender and liquid is mostly absorbed.
  6. Stir in heavy cream, Parmesan cheese, oregano, salt, and pepper. Cook for another 2-3 minutes until creamy and heated through.
  7. Remove from heat and let sit for a couple of minutes to thicken.
  8. Garnish with chopped parsley before serving.

Notes

  • You can substitute ground turkey or chicken for a leaner option.
  • Add a handful of spinach or peas for extra veggies.
  • Use half-and-half instead of heavy cream for a lighter version.
