Description

A rich and comforting one-pan meal made with tender chicken, pillowy gnocchi, and a creamy garlic sauce, perfect for busy weeknights.


Ingredients

  • 1 lb chicken breast, diced
  • 1 tbsp olive oil
  • 1 tbsp butter
  • 4 cloves garlic, minced
  • 1 tsp Italian seasoning
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1 package (16 oz) potato gnocchi
  • 2 cups baby spinach
  • 1/4 cup chopped fresh parsley (optional, for garnish)

Instructions

  1. Heat olive oil and butter in a large skillet over medium-high heat.
  2. Add diced chicken and season with salt, pepper, and Italian seasoning. Cook until browned and cooked through, about 5-7 minutes. Remove chicken from skillet and set aside.
  3. In the same skillet, add minced garlic and cook for 1 minute until fragrant.
  4. Pour in chicken broth and heavy cream, stirring to combine.
  5. Add gnocchi and bring to a gentle simmer. Cook for 5-7 minutes or until gnocchi are tender and sauce thickens.
  6. Stir in Parmesan cheese until melted and combined.
  7. Add baby spinach and cooked chicken back to the skillet. Stir until spinach is wilted and everything is well mixed.
  8. Garnish with chopped parsley and serve warm.
