- 1 lb chicken breast, diced
- 1 tbsp olive oil
- 1 tbsp butter
- 4 cloves garlic, minced
- 1 tsp Italian seasoning
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 cup chicken broth
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 1 package (16 oz) potato gnocchi
- 2 cups baby spinach
- 1/4 cup chopped fresh parsley (optional, for garnish)
Instructions
- Heat olive oil and butter in a large skillet over medium-high heat.
- Add diced chicken and season with salt, pepper, and Italian seasoning. Cook until browned and cooked through, about 5-7 minutes. Remove chicken from skillet and set aside.
- In the same skillet, add minced garlic and cook for 1 minute until fragrant.
- Pour in chicken broth and heavy cream, stirring to combine.
- Add gnocchi and bring to a gentle simmer. Cook for 5-7 minutes or until gnocchi are tender and sauce thickens.
- Stir in Parmesan cheese until melted and combined.
- Add baby spinach and cooked chicken back to the skillet. Stir until spinach is wilted and everything is well mixed.
- Garnish with chopped parsley and serve warm.

- Use pre-cooked rotisserie chicken for a quicker option.
- Substitute half-and-half for a lighter sauce.
