- 8 lasagna noodles
- 2 cups cooked shredded chicken
- 1 cup ricotta cheese
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 1 cup pesto sauce
- 1 cup Alfredo sauce
- 1 egg
- 1/2 tsp garlic powder
- Salt and pepper to taste
- 1 tbsp chopped fresh parsley (optional, for garnish)
Instructions
- Preheat the oven to 375°F (190°C).
- Cook lasagna noodles according to package instructions, then drain and lay flat on a baking sheet.
- In a bowl, combine ricotta cheese, 1/2 cup mozzarella, 1/4 cup Parmesan, egg, garlic powder, salt, and pepper. Mix well.
- Spread a thin layer of pesto on each noodle, then add a layer of the cheese mixture, followed by shredded chicken.
- Carefully roll up each noodle and place seam-side down in a greased 9×13 inch baking dish.
- In a small bowl, mix Alfredo sauce with the remaining pesto. Pour evenly over the roll ups.
- Top with remaining mozzarella and Parmesan cheese.
- Cover with foil and bake for 20 minutes. Remove foil and bake for an additional 10 minutes until bubbly and golden.
- Garnish with chopped parsley if desired and serve warm.
Notes
- Use rotisserie chicken for convenience.
- Can be made ahead and refrigerated before baking.
- For a lighter version, use low-fat cheese and light Alfredo sauce.
