Creamy Chicken Pesto Lasagna Roll Ups are a delicious twist on traditional lasagna, featuring tender lasagna noodles rolled up with shredded chicken, ricotta, pesto, and cheese, then baked in a creamy Alfredo sauce.

- 8 lasagna noodles
- 2 cups cooked shredded chicken
- 1 cup ricotta cheese
- 1/2 cup basil pesto
- 1 1/2 cups shredded mozzarella cheese, divided
- 1/4 cup grated Parmesan cheese
- 2 cups Alfredo sauce
- 1/2 tsp garlic powder
- 1/4 tsp black pepper
- Fresh basil leaves for garnish (optional)
Instructions
- Preheat the oven to 375°F (190°C).
- Cook lasagna noodles according to package instructions, drain and lay flat on a parchment-lined baking sheet.
- In a large bowl, mix shredded chicken, ricotta, pesto, 1 cup mozzarella cheese, garlic powder, and black pepper until well combined.
- Spread about 2 tablespoons of the chicken mixture onto each noodle and roll them up tightly.
- Spread 1 cup of Alfredo sauce on the bottom of a 9×13-inch baking dish.
- Place the roll ups seam-side down in the dish.
- Pour remaining Alfredo sauce over the roll ups and sprinkle with remaining mozzarella and Parmesan cheese.
- Cover with foil and bake for 20 minutes. Remove foil and bake an additional 10 minutes until bubbly and golden.
- Garnish with fresh basil if desired and serve warm.
Notes
- You can substitute cottage cheese for ricotta if preferred.
- Use rotisserie chicken for convenience.
- Can be made ahead and refrigerated before baking.
