Scale
- 2 boneless, skinless chicken breasts
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoons olive oil
- 2 tablespoons butter
- 3 cloves garlic, minced
- 1 cup heavy cream
- 1/2 cup chicken broth
- 1/2 cup grated Parmesan cheese
- 4 cups fresh spinach
- 1/2 teaspoon Italian seasoning
- 1 tablespoon all-purpose flour (optional, for thickening)
Instructions
- Season the chicken breasts with salt and pepper on both sides.
- In a large skillet over medium heat, add olive oil and sear the chicken breasts for 5-7 minutes on each side or until golden and cooked through. Remove and set aside.
- In the same skillet, melt the butter and sauté the garlic until fragrant, about 1 minute.
- Pour in the chicken broth and stir, scraping up any browned bits from the pan.
- Add heavy cream, Parmesan cheese, and Italian seasoning. Stir until well combined and creamy.
- Add spinach and cook until wilted, about 2-3 minutes.
- Return the chicken to the skillet and simmer for another 3-5 minutes to heat through and let the flavors meld. If the sauce is too thin, stir in flour to thicken.
- Serve warm with pasta, rice, or crusty bread.
Notes
- Use freshly grated Parmesan for best flavor and texture.
- For a lower-fat version, substitute half-and-half for heavy cream.
- Add mushrooms or sun-dried tomatoes for extra flavor.
