  • 2 tablespoons butter
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1/2 cup grated Parmesan cheese
  • 4 cups fresh spinach
  • 1/2 teaspoon Italian seasoning
  • 1 tablespoon all-purpose flour (optional, for thickening)

Instructions

  1. Season the chicken breasts with salt and pepper on both sides.
  2. In a large skillet over medium heat, add olive oil and sear the chicken breasts for 5-7 minutes on each side or until golden and cooked through. Remove and set aside.
  3. In the same skillet, melt the butter and sauté the garlic until fragrant, about 1 minute.
  4. Pour in the chicken broth and stir, scraping up any browned bits from the pan.
  5. Add heavy cream, Parmesan cheese, and Italian seasoning. Stir until well combined and creamy.
  6. Add spinach and cook until wilted, about 2-3 minutes.
  7. Return the chicken to the skillet and simmer for another 3-5 minutes to heat through and let the flavors meld. If the sauce is too thin, stir in flour to thicken.
