- 8 oz pasta (penne or fettuccine)
- 2 tablespoons olive oil
- 2 chicken breasts, cut into bite-sized pieces
- Salt and pepper, to taste
- 3 cloves garlic, minced
- 1 bunch asparagus, trimmed and cut into 2-inch pieces
- 1 cup heavy cream
- 1/2 cup chicken broth
- 1/2 cup grated Parmesan cheese
- 1 tablespoon butter
- 1/2 teaspoon Italian seasoning
- 1/4 teaspoon red pepper flakes (optional)
- Fresh parsley, chopped (for garnish)
Instructions
- Cook the pasta according to package directions; drain and set aside.
- In a large skillet, heat olive oil over medium heat.
- Season chicken pieces with salt and pepper, then cook until golden and fully cooked, about 5-7 minutes. Remove from skillet and set aside.
- In the same skillet, add garlic and cook for 1 minute until fragrant.
- Add asparagus and sauté for 3-4 minutes until just tender.
- Pour in heavy cream and chicken broth, stirring to combine.
- Add Parmesan cheese, butter, Italian seasoning, and red pepper flakes; stir until sauce thickens slightly.
- Return chicken to the skillet and simmer for 2-3 minutes to heat through.
- Add the cooked pasta to the skillet and toss to coat in the sauce.
- Garnish with fresh parsley and serve warm.
Notes
- Use whole wheat pasta for a healthier version.
- Add mushrooms or sun-dried tomatoes for extra flavor.
- Adjust creaminess by adding more or less heavy cream as desired.
