- 2 tablespoons olive oil
- 2 boneless, skinless chicken breasts, sliced
- 1 tablespoon Cajun seasoning
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and black pepper to taste
- 3 cloves garlic, minced
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 cup heavy cream
- 1/2 cup chicken broth
- 1/2 cup grated Parmesan cheese
- 8 oz penne pasta
- 2 tablespoons chopped fresh parsley (optional, for garnish)
Instructions
- Cook the penne pasta according to package directions. Drain and set aside.
- In a large skillet, heat olive oil over medium heat. Season the sliced chicken with Cajun seasoning, garlic powder, onion powder, salt, and pepper.
- Add the chicken to the skillet and cook until golden brown and cooked through, about 6-7 minutes. Remove and set aside.
- In the same skillet, add garlic, red bell pepper, and yellow bell pepper. Sauté for 3-4 minutes until softened.
- Pour in the heavy cream and chicken broth. Bring to a simmer and cook for 2-3 minutes.
- Stir in Parmesan cheese until the sauce is smooth and thickened.
- Return the cooked chicken to the skillet. Add the drained penne pasta and toss to coat evenly with the sauce.
- Cook for an additional 2-3 minutes, allowing the flavors to meld together.
- Garnish with chopped parsley if desired and serve hot.

- Adjust the amount of Cajun seasoning based on your heat preference.
- Use rotisserie chicken for a quicker version of this recipe.
- Can substitute half-and-half for a lighter version of the sauce.
