Description

  • 2 boneless, skinless chicken breasts, sliced
  • 1 tablespoon Cajun seasoning
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and black pepper to taste
  • 3 cloves garlic, minced
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1/2 cup grated Parmesan cheese
  • 8 oz penne pasta
  • 2 tablespoons chopped fresh parsley (optional, for garnish)

Instructions

  1. Cook the penne pasta according to package directions. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Season the sliced chicken with Cajun seasoning, garlic powder, onion powder, salt, and pepper.
  3. Add the chicken to the skillet and cook until golden brown and cooked through, about 6-7 minutes. Remove and set aside.
  4. In the same skillet, add garlic, red bell pepper, and yellow bell pepper. Sauté for 3-4 minutes until softened.
  5. Pour in the heavy cream and chicken broth. Bring to a simmer and cook for 2-3 minutes.
  6. Stir in Parmesan cheese until the sauce is smooth and thickened.
  7. Return the cooked chicken to the skillet. Add the drained penne pasta and toss to coat evenly with the sauce.
  8. Cook for an additional 2-3 minutes, allowing the flavors to meld together.
  9. Garnish with chopped parsley if desired and serve hot.

  • Adjust the amount of Cajun seasoning based on your heat preference.
  • Use rotisserie chicken for a quicker version of this recipe.
