Potatoes and Broth

  • 6 cups chicken broth (or water)
  • 3 pounds russet potatoes, cut into 1-inch cubes (skins on or off, your choice)

  • 1 teaspoon salt
  • 1 teaspoon black pepper

Instructions

  1. Bring broth to a boil: In a large stock pot, bring 6 cups of chicken broth to a rolling boil over medium-high heat.
  2. Cook potatoes: Add the cubed russet potatoes to the boiling broth and cook for about 15 minutes, or until the potatoes are tender when tested with a fork.
  3. Reserve cooking liquid: Remove ½ cup of the hot chicken broth from the pot and set it aside for later use.
  4. Drain and combine: Drain the remaining broth from the potatoes. Return the potatoes to the pot or transfer them to a large mixing bowl. Add the reserved ½ cup chicken broth, unsalted butter, Boursin Garlic and Fine Herbs cheese, salt, and black pepper.
  5. Mash the potatoes: Using a handheld potato masher or an electric hand mixer, mash the potatoes until smooth and creamy, ensuring all ingredients are well combined.
  6. Garnish and serve: Transfer the mashed potatoes to a serving bowl and optionally sprinkle with chopped fresh chives for added flavor and color.

Notes

  • Using chicken broth instead of water adds extra flavor to the potatoes, but you can substitute with water for a lighter taste.
