Description

This creamy and protein-packed cottage cheese pasta is a quick and easy dinner idea that feels indulgent but is actually healthy. With a velvety sauce made from cottage cheese, garlic, and parmesan, it’s a comforting meal you can whip up in under 30 minutes. Great for busy weeknights!


Ingredients

  • 8 oz pasta (penne, fusilli, or any shape you like)

  • 1 cup cottage cheese (full-fat or low-fat)

  • 1/4 cup grated Parmesan cheese

  • 2 cloves garlic, minced

  • 1 tbsp olive oil

  • Salt and pepper, to taste

  • 1/4 tsp red pepper flakes (optional)

  • 1/4 cup pasta water (reserved)

 

  • Fresh basil or parsley, for garnish (optional)


Instructions

  1. Bring a large pot of salted water to a boil and cook pasta according to package instructions. Reserve 1/4 cup of pasta water before draining.

  2. While pasta cooks, heat olive oil in a small skillet over medium heat. Add minced garlic and sauté for 1–2 minutes until fragrant.

  3. In a blender or food processor, combine cottage cheese, Parmesan, sautéed garlic, and a splash of pasta water. Blend until smooth and creamy.

  4. Return drained pasta to the pot. Pour the cottage cheese sauce over the pasta and stir to coat evenly. Add more pasta water as needed for a smoother texture.

  5. Season with salt, pepper, and red pepper flakes (if using). Mix well and warm over low heat for 2–3 minutes.

  6. Serve immediately, garnished with fresh basil or parsley if desired.


Notes

  • For a vegetarian boost, toss in sautéed spinach, peas, or roasted veggies.

  • Use whole wheat or high-protein pasta for added nutrition.

 

  • Leftovers keep well in the fridge for 2–3 days.
