Ingredients
Scale
Egg Mixture
- 6 large Eggs
- 1 cup Cottage Cheese (blended until smooth)
- 1 teaspoon Garlic Powder
- 1 teaspoon Onion Powder
- 1/2 teaspoon Salt
- 1/4 teaspoon Fresh Ground Pepper
- 1 cup Shredded Cheese (optional, can use cheddar, mozzarella, or others)
Vegetable Mix-ins
- 1 cup Spinach (or kale as substitute)
- 1 cup Bell Peppers (chopped)
- 1 cup Other Veggies (such as diced tomatoes or preferred mix)
Instructions
- Preheat Oven: Preheat your oven to 375°F (190°C) and grease a 12-cup muffin tin generously with nonstick spray to prevent sticking.
- Whisk Eggs and Blend Cottage Cheese: In a mixing bowl, whisk the eggs until light and frothy, about 1-2 minutes. Then blend in the cottage cheese until the mixture is smooth and creamy.
- Add Seasonings and Cheese: Stir in garlic powder, onion powder, salt, and freshly ground pepper. Add the shredded cheese at this stage if using, and mix well.
- Incorporate Vegetables: Gently fold in your chopped vegetables, such as spinach, bell peppers, and other preferred veggies, keeping the total mix-ins around one cup for balance.
- Fill Muffin Tin: Pour the mixture evenly into the prepared muffin cups, filling each about three-quarters full to allow room for rising.
- Bake the Egg Bites: Place the muffin tin in the oven and bake for 18-20 minutes, or until the centers are set and the edges are lightly golden brown.
- Cool and Serve: Remove from oven and let cool for a few minutes before carefully removing the egg bites from the tin. Serve warm or store for a quick breakfast option.
Notes
- You can swap out spinach for kale or other leafy greens according to taste.
