Description

Delicious and protein-packed Cottage Cheese Egg Bites, perfect for a quick and healthy breakfast. These fluffy, savory bites combine eggs, creamy cottage cheese, cheese, and fresh vegetables baked to golden perfection in a muffin tin for an easy grab-and-go meal.

Ingredients

Scale

Egg Mixture

  • 6 large Eggs
  • 1 cup Cottage Cheese (blended until smooth)
  • 1 teaspoon Garlic Powder
  • 1 teaspoon Onion Powder
  • 1/2 teaspoon Salt
  • 1/4 teaspoon Fresh Ground Pepper
  • 1 cup Shredded Cheese (optional, can use cheddar, mozzarella, or others)

Vegetable Mix-ins

  • 1 cup Spinach (or kale as substitute)
  • 1 cup Bell Peppers (chopped)
  • 1 cup Other Veggies (such as diced tomatoes or preferred mix)

Instructions

  1. Preheat Oven: Preheat your oven to 375°F (190°C) and grease a 12-cup muffin tin generously with nonstick spray to prevent sticking.
  2. Whisk Eggs and Blend Cottage Cheese: In a mixing bowl, whisk the eggs until light and frothy, about 1-2 minutes. Then blend in the cottage cheese until the mixture is smooth and creamy.
  3. Add Seasonings and Cheese: Stir in garlic powder, onion powder, salt, and freshly ground pepper. Add the shredded cheese at this stage if using, and mix well.
  4. Incorporate Vegetables: Gently fold in your chopped vegetables, such as spinach, bell peppers, and other preferred veggies, keeping the total mix-ins around one cup for balance.
  5. Fill Muffin Tin: Pour the mixture evenly into the prepared muffin cups, filling each about three-quarters full to allow room for rising.
  6. Bake the Egg Bites: Place the muffin tin in the oven and bake for 18-20 minutes, or until the centers are set and the edges are lightly golden brown.
  7. Cool and Serve: Remove from oven and let cool for a few minutes before carefully removing the egg bites from the tin. Serve warm or store for a quick breakfast option.

Notes

  • You can swap out spinach for kale or other leafy greens according to taste.
  • Shredded cheese is optional but adds extra flavor and richness.
  • Feel free to customize the vegetable mix-ins with your favorite fresh or sautéed veggies.
  • These egg bites keep well refrigerated for up to 4 days and can be frozen for longer storage.
  • To reheat, microwave for 30-60 seconds until warmed through.
